
My mom informed me that I would be making her my Beef Wellington dish for Mother’s Day. This took the guesswork from what to prepare 🙂 I am blessed to have my Mom, glad that we are close, and she spends a lot of time with my sons and me, and fortunate that she likes my cooking and knows what she wants to eat. This is the second time I have made this dish, and it turned out great – I love to create a complex meal and one that challenges my cooking and presentation skills. I sourced the filet from Joe and Don’s butcher in the Pike Place Market. I love to support local and owner-operated businesses. I always tip the independently-owned businesses. Don always offers me a shot of Crown Royal when I make a big purchase, and I always politely decline. I love that such traditions exist, and one can make close and personal relationships in the local community. Ironically, I made this dish mid-week as my well-intended plans to prepare this for Mother’s Day were sidetracked as I was wiped from a week of hard mountaineering, was not feeling 100% over the weekend, and fell asleep on my couch on Mother’s Day, necessitating a redo a couple of days later. My poor mother would have to wait. I think the wait was worth it…
