
One of my favorite and easy sides is grilled green beans. I prefer the skinny French variety. Grilled with garlic, they make a great side dish, easy prep, and easy cleaning. I prefer to serve them with a bit of Sambal Oelek to add some spice and heat. These go great with almost any grilled meat, but I think lamb skewers are probably the best meat pairing.
Ingredients
French green beans
Garlic cloves, peeled and whole
Olive oil
Preparation
Trim any ends of the green beans such as stems if needed
Peel the garlic cloves
Prepare a sheet of aluminum foil, placing the beans, garlic, and 1-2 tablespoons of olive oil, folding the foil over the beans and folding/sealing the ends so that the beans will steam inside
Cook over a grill for 10-15 minutes to the desired doneness – I prefer a little char, not too much, but something for more flavor and crunch
Serve with the roasted garlic and favorite condiment – the Sambal Oelek is great as I mentioned and also a spicy aioli or similar based cream sauce – I recently discovered a healthy, almond based creamy, spicy sauce, called Chipotle Bitchin Sauce – its great as a spicy, creamy substitute for dairy and eggs based products.
