
This super simple salad has become one of my favorites of this 2022 summer. It’s easy to make, packs some complex flavors together, and I think the charred corn with the reserve sherry vinegar add just enough “Je ne sais quoi” to really make this salad pop!
Ingredients
6 ears of corn
2 English cucumbers
1 red onion
2 large cloves of garlic
8oz of feta cheese
1/2 bunch of cilantro – about 1 cup chopped
2 dozen pitted kalamata olives
2-4 tablespoons EVOO
2 – tablespoons of sherry vinegar – I really am fond of an aged sherry vinegar called Vinagre de Jerez Reserva from Columela – but any decent sherry, red, champagne, or balsamic vinegar will suffice
Salt and pepper to taste
Preparation
Shuck and grill the corn until slightly charred, then remove the kernels with a knife






Seed and dice the cucumbers



Dice the red onion


Chop the cilantro


Dice the feta



Add in the kalamata olives, EVOO, and sherry vinegar and season to taste
