Beef Wellington 🥩

We all know that my mother, aka MamaT, loves Beef Wellington. Apparently, so does my friend and neighbor, Paul Ellington. One night in April, I was persuaded to prepare another Wellington. I should call it Paul Wellington, or Beef Ellington, or Beef Paul 😂.

Now, Paul is a fine cook in his own right. He is generous and makes many great dishes to share with us, so I find it only the kind thing to do, prepare him my signature dishes, well, it was really for my Mom, but please don’t tell Paul that. MamaT, Carter, Paul, and Bruce were in the house. Cobb Crew party on.
